Get Creative with Expiring Items

I made a tuna fish casserole the other night with tuna fish that was expiring next week!  I wouldn't have thought to make my casserole but I received a text this morning that let me know that I had several packets of tuna fish expiring next week.  To my delight I had all of the ingredients  on hand.  I normally add peas but this time I happened to have a bag of peas and carrots that had been in the freezer for a while so I used that. I also added artichoke hearts.  Artichoke hearts are a fun way to add another layer of vegetable and it gives it a tang!

Here is a great way to use the Millpondfarms.com system. Finding food in the freezer for dinner is super easy. Using the system I searched on meatballs and found that I had several packages of meatballs in the Basement Freezer.
Chicken Spinach Artichoke Casserole
This is one of our favorite recipes. It's fun to create great meals that store well in the freezer after you purchase foods in bulk - in this case - chicken breasts. We divide this casserole into individual serving sizes, vacuum seal it and store it in the freezer for up to 6 months.
Sloppy Joe Recipe

There are so many great dishes I make when I buy ground beef in bulk.  One of them is this recipe I found for Sloppy Joe Sandwiches.  My family just loves these.  We serve it with out homemade coleslaw and homemade pickles.... we'll have to add those recipes in the near future!

What Foods Have a Long Shelf-Life
Rising prices and scarce quantities are swaying consumers to purchase food items that last a long time. Choose food items that can easily be made into nutritious and delicious meals. I make sure I have some of the basics in my pantry such as dried peas for soups.

We used the ground beef we bought in bulk from Sam's Club. We made this with fresh meat from the store and then vacuumed sealed portions of it and placed it in the Basement Freezer.
Keep Track of Bulk Items
Purchasing items in bulk is a fairly new concept. Most of us find ourselves storing items in unusual places out of direct eyesight. I store bulk items in my office basement, bedroom closet, garage and garden room.
